Title: Hawaiian Turkey Salad

Yield: 6 Servings

3cCooked brown rice
2cCooked turkey - (coarsely chopped)
8ozPineapple chunks in juice - drain; reserve juice
8ozSliced water chestnuts - drained
1mdApple; unpeeled - cored and chopped
1/3cChopped macadamia nuts
1/2tsSalt
1/2cPlain yogurt
  Lettuce leaves
1/4cShredded coconut; toasted

Combine rice, turkey, pineapple, water chestnuts, apple, nuts and salt. Toss lightly with yogurt and 1 tablespoon pineapple juice. Serve on lettuce leaves and garnish with coconut.
